Having been open for just over 1 week, we are at that point where we begin to track trends in order to have the enough staff on duty when we need it and not too much when we don't. This is a sharp learning curve for me as I have never in my life done such a thing. We had a glitch yesterday (Friday, August 22) when one of our staff members misread the schedule. That left us short-handed for the Friday morning frenzy around 7:00 a.m. In the heat of the moment, I messed up a couple orders and had at least one customer walk out, having waited too long for her drink. If she is a reader of this blog, I offer my most sincere apologies and ask for another chance.
Joe Marino, our Associate Manager is back from his trip to Brazil and will be on duty Monday morning. Being a novice myself, I welcome Joe's experience in customer service, product quality, efficiency and ability to function under pressure. Joe is going to set up a blog site where he will be showing off some videos and pictures of his trip to Brazil. He will also be posting some educational and humorous videos from Behind the Bar. Watch for his blog.
Starting next week, I'm going out to press some flesh, pass the word and otherwise pull in new guests. So if you stop by and wonder where I am at...well, I AM working...just in a different venue.
